Vegan Oat Brownies

I was given the challenge of recreating this recipe from the web. I must confess I was not really sure about the final outcome. Well, the first bite after they came put from the oven wiped away any doubt about the delightfulness of this vegan brownies!

They are also very easy and quick to make. If you want them to be also gluten free, then make sure to use pure rolled oats.

Ingredients

450 ml coconut milk (full fat)
400 g rolled oats
150 g muscovado sugar
100 g chocolate chips
2 spoons cocoa powder (unsweetened)
1 spoon ground flaxseeds
1 teaspoon baking powder
1 pinch table salt
1/2 teaspoon vanilla essence

Steps

– pour the coconut milk onto a large bowl, add the sugar and mix well;

– add the oat and mix well;

– add the remaining ingredients and mix well till they all amalgamate together;

– grease a 30x20cm baking tray with some oil, then pour the dough onto it;

– bake in pre heated oven (fan mode) at 175 degrees for about 35 minutes;

– remove the baking tray from the oven and wait 10-15 minutes before cutting the brownies squares;

– once they cool down, they would be best served if you warm them up again a little
