Almond Jam Biscuits

Very easy and quick to make, these delicious biscuits are also gluten free. You can fill them with any jam you like.

Beware: they are quick to make but even faster to disappear!

400 g ground almond
250 g icing sugar
150 g strawberry jam
3 egg whites
1 lemon zest


– put the ground almond and the icing sugar in a bowl, mix them well together;

– add the egg whites and mix well;

– add the grated zest of the lemon;

– mix and knead well everything till you get a “dough”;

– put a spoonful dough in the palm of your hand and give it the form of a ball;

– roll it in some icing sugar, then press it in the centre to create a cavity;

– fill its centre with 1 teaspoon jam;

– repeat the 3 steps above till you finish the dough;

– cook in preheated oven at 175 degrees for around 10 minutes
