Baked Breaded Zucchini with Cheese

This is a delicious and easy side dish to make at home. The delicate flavor of the zucchini blends perfectly with the melted cheese and crispy breading. I can assure you that will become addicted to them!

100 g parmesan cheese (grated)
4 zucchini
3 eggs
2 spoons flour
1 cup breadcrumbs
q.s. extra-virgin olive oil


– grease a 26cm diameter baking tray;

– open the eggs onto a large bowl, add the grated cheese and whisk well;

– rinse and dry well the zucchini, then slice them into a 1cm thick discs;

– roll the discs into the flour;

– dip a disc into the egg and cheese mixture, then roll it into the breadcrumbs and put it onto the baking tray;

– repeat the above step till you finish all the discs;

– sprinkle some extra virgin olive oil on the zucchini;

– bake at pre heated oven (fan mode) at 200 degrees for about 20 minutes or till golden;
