700 ml vegetable stock

4 zucchini

2 green apples

1 potato

1 onion

1 leek

1 bouquet basil

1/2 glasses white wine

juice of half a lemon

q.s. extra virgin olive oil

q.s. ground ginger

q.s. table salt

q.s. almond flakes
Preparation

- – chop all the vegetables and the apples in small cubes;
- – put everything in a pan with extra virgin olive oil and a pinch of salt and saute for few minutes;
- – pour the white wine;
- – after few minutes pour hot vegetables stock;
- – low the flame, cover and cook for around 20 minutes;
- – add the fresh basil and the ginger at the last 5 minutes;
- – mix everything with a blender;
- – top with almonds flakes and basil leaves;
