Zucchini, Green Apples & Basil Soup

Ingredients

  • 700 ml vegetable stock
  • 4 zucchini
  • 2 green apples
  • 1 potato
  • 1 onion
  • 1 leek
  • 1 bouquet basil
  • 1/2 glasses white wine
  • juice of half a lemon
  • q.s. extra virgin olive oil
  • q.s. ground ginger
  • q.s. table salt
  • q.s. almond flakes

Preparation

  1. Zucchini, Green Apples & Basil Soup

     

    • – chop all the vegetables and the apples in small cubes;
    • – put everything in a pan with extra virgin olive oil and a pinch of salt and saute for few minutes;
    • – pour the white wine;
    • – after few minutes pour hot vegetables stock;
    • – low the flame, cover and cook for around 20 minutes;
    • – add the fresh basil and the ginger at the last 5 minutes;
    • – mix everything with a blender;
    • – top with almonds flakes and basil leaves;
