Ingredients

1 l vegetable stock

400 g cauliflower

180 g lentils

100 g shelled walnuts

10 fresh ginger

2 spoons tomato paste (or Maltese kunserva)

1 onion

1 bouquet chives

q.s. extra virgin olive oil
Preparation

- – put the lentils and the chopped onion in a pan and cover with water;
- – put the pan on the stove on medium heat;
- – bring to boil and add the tomato paste;
- – mix well till the tomato paste melts;
- – cook for about 30 minutes or till the lentils are almost cooked;
- – chop a cauliflower and put it in the pan;
- – cook till the cauliflower becomes soft;
- – remove the pan from the stove;
- – add the shelled walnuts and blend everything together with a blender;
- – serve with some extra virgin olive oil and grated ginger;
- – top with fresh chive
