Velvety soup of lentils, cauliflower and walnuts

Lentils cauliflower walnuts soup

Ingredients

  • 1 l vegetable stock
  • 400 g cauliflower
  • 180 g lentils
  • 100 g shelled walnuts
  • 10 fresh ginger
  • 2 spoons tomato paste (or Maltese kunserva)
  • 1 onion
  • 1 bouquet chives
  • q.s. extra virgin olive oil

Preparation

  1. Lentils cauliflower walnuts soup
    • – put the lentils and the chopped onion in a pan and cover with water;
    • – put the pan on the stove on medium heat;
    • – bring to boil and add the tomato paste;
    • – mix well till the tomato paste melts;
    • – cook for about 30 minutes or till the lentils are almost cooked;
    • – chop a cauliflower and put it in the pan;
    • – cook till the cauliflower becomes soft;
    • – remove the pan from the stove;
    • – add the shelled walnuts and blend everything together with a blender;
    • – serve with some extra virgin olive oil and grated ginger;
    • – top with fresh chive
