This is one of those recipes which comes out on a late evening when you are hungry, you have just a few ingredients left over in the fridge and do not feel like going out to the grocery shop.
The result is this delicious savory pie!

Ingredients
- 500 gricotta cheese
- 250 gpie dough
- 150 gItalian salami
- 100 ggrated Parmesan cheese
- 2eggs
- 1onion
- 1 spoonextra-virgin olive oil
- 1 pinchtable salt
- q.s.ground black pepper
For the egg wash
- 1egg
- q.s.sesame seeds
Preparation
– chop the onion and put it in a saucepan together with a pinch of salt and the tablespoon extra virgin olive oil;
– put the saucepan on the stove on medium heat;
– as soon as the oil starts frying, low the heat to the minimum, cover the saucepan with a lid and cook till onion soften in its own liquid;
– when the onion is cooked remove the saucepan from the stove;
– grease a 22 cm rounded baking tray and fold it with the puff pastry;
– beat the eggs in a separate bowl;
– add the grated Parmesan cheese, the ground pepper and whisk well;
– add the ricotta cheese, the stewed onion, the salami chopped in small cubes and mix well;
– pour the thus obtained filling onto the pastry;
– spread the egg wash onto the borders of the pie and sprinkle some sesame seeds on it;
– bake at 170 degrees for about 45 minutes or till golden;
