Peach, Basil & Vanilla Sponge

Peach and basil? Isn’t quite an strange combo? Perhaps, we are not used to combine basil with fruit, but I can guarantee you that the sweet flavor of peaches really matches with the one of basil!

This moist sponge will surely delights your summer’s breakfasts or coffee breaks, both with it delicious taste and its beautiful scent!

  • 200 gwhite spelt flour (or type 0 white flour)
  • 200 ggreek yogurt
  • 150 glight muscovado brown sugar
  • 100 mlsunflower oil (cold pressed)
  • 10 gbaking powder
  • 5 leavesfresh basil
  • 3eggs
  • 3peaches
  • 1vanilla bean


  1. – put the eggs, the vanilla seeds and the sugar into a bowl;

    – whisk them together till you get a frothy cream;

    – pour the oil and mix well;

    – add the Greek yogurt and mix well;

    – chop the basil leaves and add them too;

    – sift the flour onto it and mix well till it gets completely absorbed;

    – add the baking powder and mix well;

    – pour the mixture onto a greased 24cm diameter baking tray;

    – slice the peaches into thin wedges and top the cake with them;

    – bake at 175 degrees for about 45 minutes;
