South Europe meets South America in this fusion recipe!
It consists of a flour- tortilla wrapped into a sealed, cylindrical, shape around a mixture of vegetables, meat and spices.
While this recipe is inspired by fajitas, the filling is made with typical Mediterranean flavors.

Ingredients
- 500 gminced beef meat
- 200 gcanned corn
- 2 clovesgarlic
- 2 spoonstomato paste
- 2 spoonsextra-virgin olive oil
- 2 pinchestable salt
- 1onion
- 1potato
- 1bell pepper (red)
- 1 bouquetparsley
- 1 teaspoonground paprika
- 1 teaspoonground turmeric
- 1 teaspoonground black pepper
- 1 sprigrosemary
- 1avocado
- 8corn tortillas
Preparation
– slice the onion finely and crush the garlic cloves, then put them in a saucepan together with the rosemary needles, the salt and 2 spoons of extra virgin olive oil, mix well;
– peel the potato, chop it into small cubes and put them into the saucepan too;
– put the saucepan onto the fire and cook over medium heat;
– as soon as the onion starts to fry, cover the pot with its lid and put the flame to minimum;
– let the vegetables to stew in their own liquid;
– stir well then add the minced meat and mix well;
– cover the saucepan with the lid, and cook on low heat for another 20 minutes;
– add the tomato paste, the ground spices and mix well. Cover again with the lid and cook for another 10 minutes;
– chop the bell pepper in thin slices, drain the canned corn and transfer both vegetables into a large bowl;
– pour the cook meat and mix well;
– add the parsley finely chopped and mix well;
– heat a pan and toast the tortillas for 5 seconds on both sides;
– load the warm tortillas with a layer of chopped avocado slice and one of the cooked meat & vegetables mixture;
– if you like, add some saucy salsa;
– roll the tortillas in a burrito shape and serve immediately
