Ingredients

250 g white Spelt flour (or white flour type 0)

150 g brown icing sugar

100 g ground almonds

75 ml sunflower oil (cold pressed)

2 eggs

1 orange (zest only)

1 tangerine (zest only)

1 lemon (zest only)

1 vanilla extract

1/2 teaspoons baking powder
Preparation

- – sift the flour in a big bowl;
- – sift the icing sugar and the baking powder onto the flour and mix well;
- – add the ground almonds and mix well;
- – add the citrus zests and the vanilla extract;
- – add the eggs and the oil and knead well;
- – knead well till all ingredient are well amalgamated;
- – wrap the dough in cling film and refrigerate for 60 minutes;
- – roll out the pastry into a disc with half centimeter thickness;
- – use a cutter with your favorite shapes to form your biscuits;
- – bake at 165 degrees for about 15 minutes or till golden;
