This is a rustic cake made with wholemeal flour and sweetened exclusively with good honey. The addition of different spices gives it a unique character that goes well with the consistency of this cake.
You can fill it with chocolate cream, jam or honey and enjoy it as a treat together with a cup of coffee or tea.

Ingredients
- 180 gwhole wheat flour
- 125 mlextra virgin olive oil
- 120 gwhole wheat barley flour
- 100 gorange blossom honey
- 15 gbaking powder
- 3eggs
- Half cupmilk
- 1/2 teaspooncream of tartar powder
- 1/2 teaspoonground cinnamon
- 1/2 teaspoonground cardamom
- 1/2 teaspoonground cloves
- 1/2 teaspoonground nutmeg
- q.s.unsweetened cocoa powder (for the topping)
- q.s.spredable chocolate; jam or honey (for the filling)
Preparation
– separate in two different bowls the egg yolks from the whites;
– whip the whites with the cream of tartar until stiff and keep them aside;
– add the honey to the yolks and whisk them together for about 10 minutes or till you get a frothy cream;
– sift the flours onto the thus obtained mixture and mix well till they get completely absorbed;
– add the ground spices and baking powder, mix well;
– add the oil and mix well till it gets absorbed completely;
– add the milk and mix well till it gets absorbed completely ;
– pour the whipped egg whites and mix gently, with a rotary movement from the bottom to the top of the bowl;
– once you have obtained a creamy and smooth mixture, pour it onto a greased baking tray (20/22 cm diameter);
– bake at 170 degrees for about 40/45 minutes;– allow the cake to cool down, then cut it in small squares;
– fill the squares with your favorite filling, then sprinkle some cocoa powder onto them;
