Ingredients
- 500 gpumpkin pulp
- 2sweet potatoes
- 1red onion
- 1pommegranate
- 1vegetable stock cube
- 1 spooncoconut butter
- 1 bouquetchives
- q.s.extra virgin olive oil
Preparation
– slice the onion, cut the pumpkin and the potatoes into cubes, then put everything in a large pot and cover it with 2 third of water;
– bring to boil then add the vegetable cube, stir and cook on medium heat for at least 20 minutes or until the potatoes are cooked;
– add the coconut butter and blend everything together;
– serve topped with chopped chives, pomegranate grains and few drops of extra virgin olive oil
