Pumpkin, Sweet Potato, Coconut Butter and Pomegranate Soup

Ingredients

  • 500 gpumpkin pulp
  • 2sweet potatoes
  • 1red onion
  • 1pommegranate
  • 1vegetable stock cube
  • 1 spooncoconut butter
  • 1 bouquetchives
  • q.s.extra virgin olive oil

Preparation

  1. – slice the onion, cut the pumpkin and the potatoes into cubes, then put everything in a large pot and cover it with 2 third of water;

    – bring to boil then add the vegetable cube, stir and cook on medium heat for at least 20 minutes or until the potatoes are cooked;

    – add the coconut butter and blend everything together;

    – serve topped with chopped chives, pomegranate grains and few drops of extra virgin olive oil
