This is one of the traditional winter soups in Malta. Its origin goes back to the times when the Knights of St. John were ruling the country. My recipe is inspired by that soup.
Jerusalem artichoke is a very nice and healthy root vegetable, with plenty of benefits for our health.
Do not allow the color of this soup to put you off. The texture and the taste are really really good.
Jerusalem artichokes are in full season during Christmas, thus this would make a delicious starter-soup for your Holidays dinners and lunches.

Oh I love artichokes – they are delicious stew in a little water, olive oil, garlic and parsley and eaten hot or cold. But lately I have been cooking it for a soup. I assure you it’s a delicacy. I will try your recipe as well.
Well done Pietru and best wishes🎉🎉
