Italian Spaghetti with Bell Pepper & Cheese Sauce

This pasta is very easy and quick to make. I recommend you to use red or orange bell peppers as they are more sweet and less bitter than the green ones. Their flavor would bind perfectly with the cheese.

This sauce is really creamy and delicious, you must try it!

  • 230 gItalian spaghetti
  • 2 spoonsgrated Pecorino cheese
  • 2 spoonsextra-virgin olive oil
  • 1orange bell pepper
  • 1white onion
  • 1 spoontomato paste
  • 11/2 glasswater
  • q.s.table salt
  • q.s.fresh parsley


  1. – chop the onion and the bell pepper and put them into a saucepan;

    – add 1 pinch of table salt;

    – add 2 spoons of extra virgin olive oil and mix well;

    – meanwhile, in a separate small pot, melt the tomato paste into the lukewarm water;

    – put the saucepan with the chopped vegetables onto the stove on medium heat;

    – as soon as the oil starts to fry pour the diluted tomato paste and mix well;

    -lower the heat, cover the saucepan and allow the vegetables to simmer;

    -while the vegetables simmer, take another pot and bring to boil abundant salted water and cook the spaghetti in it;

    – when the vegetables become soft, remove the saucepan from the stove and blend everything together till you get a smooth sauce;

    – add the grated cheese and mix well till you get a smooth creamy sauce;

    – drain the cooked spaghetti, mix them with the sauce and serve topped with some fresh chopped parsley
