Ingredients
- 200 gGreek yogurt
- 200 gwhite spelt flour (or white flour type 0)
- 150 glight muscovado brown sugar
- 100 mlSunflower oil (cold pressed)
- 70ground coconut
- 50 gDark chocolatechips
- 3Eggs
- 2 teaspoonsBaking powder
Preparation
β put the eggs and the sugar into a bowl;
β whisk them together till you get a frothy cream;
β add the Greek yogurt and mix well;
β sift the flour onto it and mix well till it gets completely absorbed;
– add the coconut and mix well;
– add the chocolate chips and mix well;
β add the oil and mix well till it gets absorbed completely;
β add the baking powder and mix well;
β pour the mixture onto a plum cake baking tray;
β bake at 165 degrees for about 55/60 minutes;
