This is a very easy and quick pasta dish to make in winter, when broccoli are on season.
all the ingredients blend very well together to bring you a delicious Mediterranean flavor, even when summer is still months away 🙂

Ingredients
- 400 gfresh Sicilian ricotta cheese
- 350fresh broccoli
- 200 gbrown penne pasta
- 10sun dried tomatoes
- 2 spoonsextra virgin olive oil
- q.s.table salt
- q.s.grated Ragusano or Parmesan cheese
Preparation
– wash and rinse well the broccoli;
– cut the tops of the broccoli, and boil them in salted water;
– drain them and keep them aside;
– bring to boil abundant salted water, then pour the brown pasta into it and cook for about 8/10 minutes (read packet indication about the minutes for al dente cooking);
– while the pasta cooks, put the ricotta cheese, the sund dried tomatoes and the extra virgin oil into a food mixer;
– blend everything together till you get a smooth cream;
– drain the cooked pasta and transfer it into a bowl;
– add the broccoli and pour the ricotta cream;
– mix everything well, then serve topped with some grated Ragusano cheese or Parmesan
