Spelt Wrap with Grilled Courgettes & Smoked Wild Salmon

This is an extremely easy yet delicious recipe you can make whenever you are in a hurry or to take-away on the beach, the office or wherever you want.

I am became literally addicted to this recipe especially in summer, when I chill out on my roof with a nice glass of cold beer.

Ingredients

  • 100 gsmoked wild salmon
  • 5 leavesfresh mint
  • 1spelt wrap (or made with type 1 flour)
  • 1courgette
  • 1 spoonmayonnaise
  • 1 clovegarlic
  • 1 spoonvinegar
  • 1 spoonextra-virgin olive oil

Preparation

  1. – wash the courgette and dry it well with a kitchen cloth;

    – cut the courgette into long slices with about 2 mm thickness;

    – grill the slices, on both sides, onto a cast iron plate;

    – transfer the grilled courgette slices into a bowl;

    – season them with the chopped garlic, chopped mint leaves, the oil and the vinegar;

    – warm up your wrap, on both sides, onto a cast iron plate;

    – spread the mayonnaise onto the wrap;

    – put the seasoned grilled courgette slices onto it;

    – top the courgette with the salmon slices;

    – roll the wrap and enjoy it
