This fish burger is made of deep fried sea bass chunks dressed with a fresh and slightly acidic hollandaise sauce flavored with grapefruit and saffron. The panko battering and the fried potato slices give that amazing crispy texture to the burger.
You can also serve it as a starter by simply dressing the fish with the sauce, accompanied by some fries.

Ingredients
- 250 gwild seabass fillet
- 100 gpanko (mixed with table salt and ground dry coriander, ginger, cumin, lemon grass and parsely)
- 1egg
- 1potato
- q.s.salad
for the Maltaise sauce
- 45 gmayonnaise
- 0.30 gground saffron
- Halfgrapefruit (juice)
Preparation
– take the sea bass fillet and cut it into strips;
– pass them in the beaten egg and then in the panko;
– deep fry in hot oil for no more than 1 minute;
– peel the potato and slice it very thinly, fry it in hot oil;
– prepare the dressing by putting the mayonnaise into a bowl, add the saffron and the juice of half a grapefruit and whisk vigorously;
– compose the burger by making a first layer of salad, proceed with the fried panko sea bass, pour the dressing onto it and finally top with a few slices of fried potato slices;
