I had tried a nice Greek restaurant here in Malta. They served me an amazing feta cheese and spinach pie, which I really liked.
Therefore, I decided to make my own at home and share the recipe with you.
In my recipe I also added some ricotta cheese (thought the original Greek spanakopita has feta cheese only).
It is very easy and quick recipe which you can make it either as a main course or starter.

Ingredients
- 500 gspinach
- 350 gfeta cheese
- 200 gfresh ricotta cheese
- 5 sheetsphyllo pastry
- 3 spoonsextra-virgin olive oil
- 1egg
- 1 sprigfresh dill
- q.s.sesame seeds
- 1 pinchtable salt
Preparation
– chop the onion finely and put it into a medium saucepan together with the dill;
– add the pinch of salt, 2 full spoons of extra virgin olive oil and mix well;
– put the saucepan onto the stove on medium heat;
– as soon as the oil starts to fry, lower the heat to minimum, cover the saucepan with its lid and let the onion to stew slowly;
– when the onion becomes soft, remove the lid and add the spinach;
– close the lid, set the heat to medium and cook the spinach for 10 minutes (15/20 if you used frozen ones);
– remove the saucepan from the stove;
– transfer the cooked vegetables into a colander, press well with a spoon to drain the cooked spinach from their water;
– transfer them into a large bowl and add the feta cheese (crush it with your hands);
– sift the ricotta cheese onto them and mix well;
– add the egg and mix well;
– grease a baking tray (30x20cm) with some oil;
– fold it with 3 phyllo pastry sheets, spreading some oil between each layer;
– pour the filling and close the pie with 2 phyllo pastry sheets;
– spread olive oil on top and spread sesame seeds on top;
– bake at 170 degrees for 40 minutes
