- 200 gdark chocolate
- 200 gdark muscovado brown sugar
- 130 gwhite spelt flour (or white flour type 0)
- 125 gunsalted butter
- 3eggs
- 3 spoonsunsweetened cocoa powder
For the salted caramel
- 180 glight muscovado brown sugar
- 125 mlfresh cream
- 85 gunalted butter
- 5 gtable salt
For the salted caramel
– put the sugar and the salt into a high saucepan and onto a stove;
– bring to a simmer over medium heat, stirring every so often till sugar melts;
– increase heat to medium-high and cook until deeply golden, without stirring, for 5 minutes more (If can use a candy thermometer, then you want it to reach 350°);
– once sugar caramelizes by reaching s a deep copper color, turn off heat and immediately stir in cream and butter. Beware, the mixture will bubble up so be careful because you may risk to scald yourself!
– allow the salted caramel to cool slightly in the saucepan, then transfer it to a bowl to cool down completely.
For the brownies
– melt the chocolate in a bain-marie together with the butter;
– whisk the eggs with the sugar till you get a smooth cream;
– pour the melted chocolate-butter cream onto the eggs and mix well;
– sift the flour and the cocoa powder onto it and mix well;
– fold a square 20×20 cm baking tray with baking paper;
– pour half of the brownies mixture onto it;
– top it with the lukewarm salted caramel sauce;
– top with the remaining brownies mixture;
– bake at 170 degrees for 25/35 minutes;
