Red Fruit Plum-cake

Ingredients

  • 300 g flour (type 0)
  • 250 g blackberry yogurt (or any other red fruit)
  • 180 g muscovado brown sugar
  • 100 g frozen red fruit
  • 70 ml sunflower oil (cold pressed)
  • 17 g baking powder
  • 3 eggs
  • 1 pinch table salt
  • q.s. icing sugar

Preparation

  1. Red Fruit Plum-cake
    • – whisk the eggs with the sugar and the pinch of salt until they get light and frothy;
    • – meanwhile, in a separate bowl sift the flour together with the baking powder;
    • – slowly pour the flour on the whisking eggs. Keep on mixing until the flour gets absorbed completely;
    • – do the same with the yogurt;
    • – finally, pour the oil and mix until it get absorbed;
    • – pour the mixture onto a greased plum-cake baking tray;
    • – top with the frozen red fruits and bake at 160 degree for about 60 minutes;
    • – allow to the cake to cool down before removing it from the tray;
    • – sprinkle icing sugar on the top before serving;
