Ingredients

300 g flour (type 0)

250 g blackberry yogurt (or any other red fruit)

180 g muscovado brown sugar

100 g frozen red fruit

70 ml sunflower oil (cold pressed)

17 g baking powder

3 eggs

1 pinch table salt

q.s. icing sugar
Preparation

- – whisk the eggs with the sugar and the pinch of salt until they get light and frothy;
- – meanwhile, in a separate bowl sift the flour together with the baking powder;
- – slowly pour the flour on the whisking eggs. Keep on mixing until the flour gets absorbed completely;
- – do the same with the yogurt;
- – finally, pour the oil and mix until it get absorbed;
- – pour the mixture onto a greased plum-cake baking tray;
- – top with the frozen red fruits and bake at 160 degree for about 60 minutes;
- – allow to the cake to cool down before removing it from the tray;
- – sprinkle icing sugar on the top before serving;
