Today, making a good gluten-free is not that difficult anymore. This is also thanks to some ready-made powder available on the market. However, the main downfall with them is that they are rich in starches, sugars and refined flours. Finally, those who are intolerant to gluten often have problems digesting yeast.
Therefore, I attempted this bread by making my own mix of flours and substituting yeast with a homemade preparation of psyllium husk, water and vinegar. These 3 ingredients together will farm an incredible binding gel which will give the bread consistency. Finally, the baking soda will simulate the leaving process and will make your bread looking and tasting like the one baked by using yeast.

Steps
– put the psyllium powder into a bowl and mix it with the water and the vinegar, allow it to rest for 30 minutes;
– sift the 3 flours into a large bowl together with the baking soda and the salt;
– after 30 minutes, the psyllium mixture should have turned into a gel: pour it onto the bowl with the flours and mix well;
– pour the oil and start kneading with your hands till you get a smooth dough;
– transfer the bread dough into loaf baking tray and top it with you favorite seeds;
– bake in pre-heated oven at 180 degrees for about 45 minutes or till golden;
– once baked, allow the bread to cool down completely before slicing it and serving it.
