Einkorn flour Tarts filled with Sicilian Tangerine Marmalade

Einkorn wheat, in Italy is called small farro, is the first cereal to be cultivated and used by men over 10,000 years ago.

It is a typically Mediterranean species, that can be found also in Italy and which, for thousands of years, has represented the basis of the diet of agricultural populations, together with emmer wheat.

Einkorn wheat has low levels of simple diploid glutens, unlike other wheats, making it well tolerated even by those with gluten sensitivities.

Einkorn wheat flour has excellent characteristics for the preparation of cakes, bread, pizza and other bakery products.


As its gluten is less tenacious than the one of common wheat, the dough with einkorn wheat flour is less elastic, more friable and therefore more suitable for making short-crust pastry and doughs for biscuits, pastries and tarts.


Thanks to these properties, in order to obtain a good crumbly dough, you generally need less fats than the ones you would need with wheat flour.
The high content of carotenoid pigments also gives the dough a strong yellow color.

Ingredients

For the pastry

350 g einkorn flour
175 g dark muscovado sugar
145 lard (or butter – or 135ml sunflower oil)
125 g rice flour
2 eggs

For the filling

8 tablespoons tangerine marmalade

Steps

– sift the flours onto a large bowl;

– add the vanilla beans, the sugar, the lard and the eggs;
– mix well with your hands;
– mix and knead until you get a smooth dough;
– wrap the dough in cling film and keep refrigerated for at least 1 hour;
– spread the pastry to a thickness if 1 cm and cut 8 discs of about 14 cm diameter;
– grease the small baking trays (10 cm diameter) with some oil or butter;
– fold them with the pastry discs;
– pour 1 tablespoon marmalade in each tart;
– top them with thin strings of pastry;
– bake at 180 degrees for about 30/35 minutes or till golden
