Cookies without sugar or sweeteners

What is one of the biggest reasons why you can’t eat as many biscuits as you would like?

Sugar! What if there was a recipe for delicious cookies without sugar or sweeteners? What if these cookies were also without butter and margarine?


Here is the recipe for these delicious cookies, sweetened exclusively with natural dates, and made with extra-virgin olive oil!

Ingredients

200 g rice flour
180 g natural dates
150 g ground almonds
100 g extra-dark chocolate chips
100 ml extra-virgin olive oil
2 eggs
2 teaspoons baking ammonia (or baking powder)
q.s. ground cinnamon

Steps

– pit the dates and transfer them into a bowl, then soak them in warm water for at least 15 minutes;

– drain the pitted dates, then transfer them into a food processor together with the oil: reduce to a smooth pulp;

– sift the rice flour onto a large bowl, add the ground almonds and mix well;

– add the eggs and the date paste and knead well;

– add the chocolate chips, the cinnamon and the baking ammonia;

– knead well till you get a smooth dough;

– take a spoon of dough into your hands and shape it into a ball, then place it onto a baking tray and press it with a cookies mold;

– repeat the above step till you have exhausted the dough;

– bake in pre heated oven (fan mode) at 180 degrees for about 20 minutes or till golden;

– remove the cookies from the oven and allow them cool down completely before storing them into an air-tight container
