Chickpea & Coconut Flour Cookies with Chocolate Chips

These very quick-to-make and bake tasty cookies are naturally gluten-free and also suitable for vegan diets.

Ingredients

120 g chickpea flour
60 ml sunflower oil (cold pressed)
60 ml water
50 g muscovado sugar
40 g almond flour
40 g dark chocolate chips
q.s. ground cinnamon

Steps

– put all ingredients, except for the cinnamon, into a bowl;

– mix everything together till you get a smooth dough;

– fold a baking tray with baking paper;

– with the tip of three fingers, take some dough then shape it into a ball with the palms of your hands;

– do 12 balls and put them onto the baking tray, than flat them with a fork;

– dust the cookies with ground cinnamon;

– bake in pre-heated oven at 175 degrees for about 15 minutes or till golden;

– allow the cookies to cool down completely before eating them;

– store into a airtight container up to a week
