In Sicily, the month of September brings a delicious variety of plums: the dark blue plum. This variety is used to make prunes.
I used some fresh plum form my uncle’s tree to make this delicious, moist cake.

Ingredients
- 200vanilla yogurt
- 200 gwhite spelt flour (or type 0 white flour)
- 150 glight muscovado brown sugar
- 100 mlsunflower oil (cold pressed)
- 70 gcornstarch
- 10 gbaking powder
- 3eggs
- 2blue plums
Preparation
– put the eggs and the sugar into a bowl;
– whisk them together till you get a frothy cream;
– add the yogurt and mix well;
– sift the flours, the cornstarch and the baking powder onto it and mix well till they get completely absorbed;
– add the oil and mix well till it gets absorbed completely;
– pour the mixture onto a plum cake baking tray;
– slice the plums into wedges and put them onto the cake;
– bake at 170 degrees for about 50 minutes;
