Octopus Pie

This delicious fish pie is a delicious mixture and explosion of Mediterranean flavors.

Cooking the fresh octopus would take some time. However, if you cannot find fresh octopus or if you do not have time to cook it beforehand, you can used canned chopped octopus too.

Ingredients

  • 250 gfresh octopus
  • 250 gBrisee pastry (or puff pastry)
  • 4sun-dried tomatoes
  • 2anchovies in oil
  • 2 clovesgarlic
  • 2 spoonsextra-virgin olive oil
  • 1 glassdry white wine
  • 1 glasswater
  • 1potato
  • 1lemon
  • 1 spoonbreadcrumbs
  • 1 spooncapers
  • 1 spoonpitted sliced black olives
  • 1 teaspooncayenne pepper
  • 1 leafbay leaf
  • q.s.fresh parsley
  • q.s.fresh thyme
  • 1egg (for the egg-wash )
  • 1 spoonsesame seeds (for the topping)

Preparation

  1. -freeze the octopus overnight;

    – chop the octopus in small cubes whilst it is still frozen;

    – put it in a pot together with the glasses of water and wine;

    – add the bay leaf and thyme;

    – put the pot on the stove and bring to boil;

    – cook on medium heat for about 40 minutes;

    – if you are using canned octopus, skip the above steps and just drain the canned octopus form its oil;

    – chop the potatoes and boil them separately;

    – drain the octopus and the potatoes and mix them together;

    – add the chopped parsley, the olives, the capers and chopped sun dried tomatoes;

    – crash the anchovies with a fork and reduce them to a paste, then them to octopus too;

    – add the lemon juice;

    – chop the garlic cloves and put the in a sauce pan with the extra virgin olive oil;

    – add the cayenne pepper and some parsley;

    – as soon as the garlic starts browning, add the breadcrumbs and mix well for one minute till they are toasted;

    – season the octopus mixture with the above garlic preparation;

    – adjust of salt;

    – roll down the pastry into a thin disc;

    – place the octopus mixture onto one half of the disc;

    – close with the other half and seal the edges with your fingers;

    – brush the pie with the egg, then sprinkle it with sesame seeds;

    – bake in pre-heated oven at 180 degrees for around 20/30 minutes
