This cake is a blend of Matcha, Greek yogurt and Coconut. Everything topped with dark chocolate.

Ingredients
- 250 gwhite spelt flour (or white flour type 0)
- 200 gGreek yogurt
- 180 glight muscovado brown sugar
- 130 gdark chocolate chips
- 125 gbutter (or cold-pressed sunflower oil)
- 50 gdry ground coconut
- 4eggs
- 3 teaspoonsmatcha green tea
- 2 teaspoonsbaking powder
- 1vanilla bean
Preparation
– melt the butter oven a bain-marie;
β meanwhile put the eggs, the vanilla seeds and the sugar into a bowl;
β whisk them together till you get a frothy cream;
β add the Greek yogurt and mix well;
β sift the flour onto it and mix well till it gets completely absorbed;
– do the same with the matcha and the baking powder;
β add the dry ground coconut and mix well;
β add the melted butter and mix well till it gets absorbed completely;
β pour the mixture onto a plum cake baking tray;
– top with the chocolate chips;
β bake at 165 degrees for about 55/60 minutes;
