Matcha, Greek Yogurt, Coconut & Dark Chocolate Cake

This cake is a blend of Matcha, Greek yogurt and Coconut. Everything topped with dark chocolate.

  • 250 gwhite spelt flour (or white flour type 0)
  • 200 gGreek yogurt
  • 180 glight muscovado brown sugar
  • 130 gdark chocolate chips
  • 125 gbutter (or cold-pressed sunflower oil)
  • 50 gdry ground coconut
  • 4eggs
  • 3 teaspoonsmatcha green tea
  • 2 teaspoonsbaking powder
  • 1vanilla bean


  1. – melt the butter oven a bain-marie;

    – meanwhile put the eggs, the vanilla seeds and the sugar into a bowl;

    – whisk them together till you get a frothy cream;

    – add the Greek yogurt and mix well;

    – sift the flour onto it and mix well till it gets completely absorbed;

    – do the same with the matcha and the baking powder;

    – add the dry ground coconut and mix well;

    – add the melted butter and mix well till it gets absorbed completely;

    – pour the mixture onto a plum cake baking tray;

    – top with the chocolate chips;

    – bake at 165 degrees for about 55/60 minutes;
