Ingredients

200 g flour (type 0)

180 g brown sugar

125 ml sunflower oil (cold pressed)

70 g ground almonds

4 eggs

2 lemons (organic)

1 teaspoon baking powder

1 vanilla pod

1 pinch table salt
Preparation

- – whisk the egg’s yolks together with the sugar, the grated peel of one lemon and the vanilla;
- – in a separate bowl, whisk the egg’s whites with a pinch of salt;
- – pour the lemon juice and the oil onto the whisking egg’s yolks, mix well;
- – pour the sifted flour, ground almonds and baking powder;
- – when the ingredients will be well combined, pour the egg’s white and fold gently;
- – pour the cake mix in a greased baking tray;
- – bake at 170 degree for about 40/50 minutes;
- – serve dusted with some icing sugar
