Ingredients

  • 200 g flour (type 0)
  • 180 g brown sugar
  • 125 ml sunflower oil (cold pressed)
  • 70 g ground almonds
  • 4 eggs
  • 2 lemons (organic)
  • 1 teaspoon baking powder
  • 1 vanilla pod
  • 1 pinch table salt

Preparation

  1. Lemon & Vanilla Cake
    •  – whisk the egg’s yolks together with the sugar, the grated peel of one lemon and the vanilla;
    • – in a separate bowl, whisk the egg’s whites with a pinch of salt;
    • – pour the lemon juice and the oil onto the whisking egg’s yolks, mix well;
    • – pour the sifted flour, ground almonds and baking powder;
    • – when the ingredients will be well combined, pour the egg’s white and fold gently;
    • – pour the cake mix in a greased baking tray;
    • – bake at 170 degree for about 40/50 minutes;
    • – serve dusted with some icing sugar
