Greek Yogurt & Vanilla Cake

This moist and delicious cake is the ideal treat for breakfast or for your coffee/tea breaks during the day 🙂

Greek Yogurt & Vanilla Cake

Ingredients

  • 200 g white flour (type 0)
  • 200 g Greek yogurt
  • 150 g brown icing sugar
  • 100 ml sunflower oil (cold pressed)
  • 70 g rice flour (or corn starch)
  • 10 g baking powder
  • 3 eggs
  • 1 pinch table salt
  • 1 vanilla pod

Preparation

  1. Greek Yogurt & Vanilla Cake
    • – put the eggs, the icing sugar, the vanilla essence and the pinch of salt in a bowl;
    • – whisk them together till you get a frothy cream;
    • – add the Greek yogurt and mix well;
    • – sift the flours onto it and mix well till they get completely absorbed;
    • – add the oil and mix well till it gets absorbed completely;
    • – add the baking powder and mix well;
    • – pour the mixture onto a plum cake baking tray;
    • – bake at 165 degrees for about 50 minutes;
