Ingredients

200 g white flour (type 0)

200 g Greek yogurt

150 g brown icing sugar

100 ml sunflower oil (cold pressed)

70 g rice flour (or corn starch)

10 g baking powder

3 eggs

1 pinch table salt

1 vanilla pod
Preparation

- – put the eggs, the icing sugar, the vanilla essence and the pinch of salt in a bowl;
- – whisk them together till you get a frothy cream;
- – add the Greek yogurt and mix well;
- – sift the flours onto it and mix well till they get completely absorbed;
- – add the oil and mix well till it gets absorbed completely;
- – add the baking powder and mix well;
- – pour the mixture onto a plum cake baking tray;
- – bake at 165 degrees for about 50 minutes;
