Gluten Free Almond & Apple Cake

Gluten Free Almond and Apple cake

Ingredients

  • 200 g ground almonds
  • 170 g light muscovado brown sugar
  • 50 g rice flour
  • 50 ml sunflower oil (cold pressed)
  • 10 g baking tray
  • 4 eggs
  • 2 apples
  • 1 lemon
  • 1 pinch ground cinnamon
  • 1 pinch ground cloves
  • 4 spoons granulated sugar (to decorate)

Preparation

  1.  

    • – chop the apples in small cubes and mix them with the lemon juice and the ground spices;
    • – put them in a saucepan together with  50gr of sugar;
    • – put the saucepan on a stove and cook on a medium heat till you get a jam-like mixture;
    • – in a separate bowl, beat the eggs with the remaining sugar till you get a frothy cream;
    • – add the almond ground and mix well;
    • – add the rice flour and mix well;
    • – add the sunflower oil and mix well;
    • – add the baking powder and mix well;
    • – add the jam-like apple mixture and mix well;
    • – pour the cake mixture in baking tray of 22cm diameter;
    • – top with granulated sugar;
    • – bake at 170 degrees for around 40/50 minutes;
