Ingredients

200 g ground almonds

170 g light muscovado brown sugar

50 g rice flour

50 ml sunflower oil (cold pressed)

10 g baking tray

4 eggs

2 apples

1 lemon

1 pinch ground cinnamon

1 pinch ground cloves

4 spoons granulated sugar (to decorate)
Preparation

- – chop the apples in small cubes and mix them with the lemon juice and the ground spices;
- – put them in a saucepan together with 50gr of sugar;
- – put the saucepan on a stove and cook on a medium heat till you get a jam-like mixture;
- – in a separate bowl, beat the eggs with the remaining sugar till you get a frothy cream;
- – add the almond ground and mix well;
- – add the rice flour and mix well;
- – add the sunflower oil and mix well;
- – add the baking powder and mix well;
- – add the jam-like apple mixture and mix well;
- – pour the cake mixture in baking tray of 22cm diameter;
- – top with granulated sugar;
- – bake at 170 degrees for around 40/50 minutes;
