Ingredients

250 g white flour type 0 (I used white spelt flour)

180 g dark muscovado brown sugar

150 ml sunflower oil (cold pressed)

125 g dark chocolate chips

100 g fresh blueberries

50 g unsweetened dark chocolate powder

15 g baking powder

4 eggs

1 teaspoon ground cinnamon

1 pinch table salt
Preparation

- – put the eggs, the sugar and the pinch of salt into a large bowl or food processor;
- – whisk them together till you get a fluffy, stiff cream;
- – sift the flour onto the cream and mix gently, with a rotary movement from the bottom to the top of the bowl;
- – sift the cocoa powder onto the mixture and mix gently as above;
- – do the same with the ground cinnamon;
- – do the same with the baking powder;
- – add the chocolate chips and mix gently as above;
- – pour the oil and mix gently till it gets absorbed;
- – add the blueberries and mix gently;
- – pour the mixture onto a 22 cm baking tray;
- – bake at 165 degrees for about 45/50 minutes;
