This is a very simple yet tasty recipe for when you need something quick to make.
Just some good fresh tomato sauce, eggs and some cheese. Some nice homemade bread will complement this dish amazingly.

Ingredients
- 250 mltomato puree
- 4eggs
- 3 pinchessalt
- 2 spoonsextra-virgin olive oil
- 2 spoonsgrated Parmesan cheese
- 1onion
- q.s.fresh parsely
- q.s.ground black pepper
Preparation
– chop the onion finely and put it into a medium sized saucepan;
– add 1 pinch of salt, the 2 full spoons of extra virgin olive oil and mix well;
– put the saucepan onto the stove on medium heat;
– as soon as the oil starts to fry, lower the heat to minimum, cover the saucepan with its lid and let the onion to simmer slowly;
– when the onion becomes soft, remove the lid and pour the tomato sauce and mix well;
– add a pinch of salt and stir well;
– let the sauce cook for about 10 minutes, then open the eggs onto it;
– cover the saucepan with its lid again and let the eggs cook in the sauce for about 5 minutes;
– remove the lid and spread the grated cheese all over the saucepan;
– allow the cheese to melt, then remove the saucepan from the stove;
– serve topped with chopped fresh parsley and some ground pepper;
