Ingredients

300 g dark chocolate

250 g mixed red fruit (you can used frozen ones too)

200 g dark chocolate dry biscuits

200 g ground almonds

200 g butter

200 ml crème fraîche

1 teaspoon honey

2 teaspoons icing sugar
Preparation

- – crush the biscuits with a blender until you get a sandy mixture;
- – mix them with the ground almonds;
- – melt the butter in a pan and pour it on the above mixture;
- – stir everything together until you get a smooth paste;
- – pour the mixture in a 22cm silicon baking tray;
- – put in the freezer for at least 15 minutes;
- – meanwhile, put the milk in a saucepan together with the crushed dark chocolate;
- – put the saucepan on a gentle flame. As soon as the milk starts to heat, remove from the fire and stir well until it melts completely;
- – in a separate bowl, whip the crème fraîche together with 1 teaspoon of icing sugar;
- – pour the whipped cream on the dark chocolate cream, fold gently until you get a smooth soft cream;
- take out the base from the fridge and remove the biscuits base from the silicon baking tray;
- – pour the chocolate ganache on the base and flatten well the top, making sure there are no air pockets;
- – spread the mixed red fruits on top;
- – put the cake back into the freezer for another 15 minutes;
- – after 15 minutes, the cake will be ready and you can enjoy immediately or keep it in the freezer and serve at a later time;
- – before serving it, sprinkle with the remaining 1 teaspoon icing sugar and decorate with fresh mint leaves.
