- 200 gcous cous
- 200 gpumpkin pulp
- 125 gfeta cheese
- 1pomegranate
- 1 sprigrosemary
- 1 spoonextra-virgin olive oil
- 1 pinchtable salt
- 1/2lemon juice
- q.s.parsley
Preparation
– fold a baking tray with some baking paper, and put the slice of pumpkin onto it;
– bake at 180 degrees for about 30 minutes or till roasted;
– while the roasted pumpkin cool down a bit, prepare the cous cous as follow;
– put the cous cous into a bowl together with the oil and salt and mix well;
– pour hot water onto the cous cous, stir well with a fork then cover the bowl with a lid or plate for about 5 minutes;
– chop the roasted pumpkin into cubes and add it to the cooked cous cous;
– do the same with the feta cheese;
– add the pomegranate grains, the juice of half a lemon and the rosemary needles;
– mix everything well;
– serve topped with some fresh parsley
