Coconut Milk & Cocoa Cake

This is a nice and moist cake made with full-fat coconut milk and cocoa. No added butter or vegetable oils. Just pure coconut extract and cocoa for this delicious cake 🙂

Ingredients

  • 300 mlcoconut milk (canned full-fat)
  • 250 gwhite spelt flour (or type 0 white flour)
  • 200 gcoconut flakes
  • 180 gdark muscovado brown sugar
  • 40 gunsweetened cocoa powder
  • 4eggs
  • 2 teaspoonsbaking powder
  • 1vanilla bean

Preparation

  1. – put the eggs, the vanilla seeds and the sugar into a bowl;

    – whisk them together till you get a frothy cream;

    – add the coconut milk and mix well;

    – sift the flour onto it and mix well till it gets completely absorbed;

    – do the same with the cocoa powder and the baking powder;

    – pour the mixture onto a greased baking tray (22cm diameter);

    – top with the coconut flakes;

    – bake at 170 degrees for about 45 minutes;
