Cauliflower, Pumpkin & Dried Figs Soup

Ingredients

  • 500 g pumpkin pulp
  • 1 medium size cauliflower
  • 50 g dried figs
  • 2 potatoes
  • 2 cloves garlic
  • 1 sprig celery
  • 1 vegetable stock cube
  • 1 bouquet thyme
  • 1 pinch ground ginger
  • 1 pinch ground nutmeg
  • q.s. table salt
  • q.s. extra virgin olive oil

Preparation

  1. Cauliflower, Pumpkin & Dried Figs Soup

     

    • – chop the cauliflower, the pumpkin, the celery and the potatoes;
    • – put everything in a pan together with the dried figs and the garlic;
    • – cover with water;
    • – when it starts boiling add the vegetables stock and the spices;
    • – cook for around 20 minutes;
    • – mix everything with a blender;
    • – top with fresh thyme;
