500 g pumpkin pulp

1 medium size cauliflower

50 g dried figs

2 potatoes

2 cloves garlic

1 sprig celery

1 vegetable stock cube

1 bouquet thyme

1 pinch ground ginger

1 pinch ground nutmeg

q.s. table salt

q.s. extra virgin olive oil
Preparation

- – chop the cauliflower, the pumpkin, the celery and the potatoes;
- – put everything in a pan together with the dried figs and the garlic;
- – cover with water;
- – when it starts boiling add the vegetables stock and the spices;
- – cook for around 20 minutes;
- – mix everything with a blender;
- – top with fresh thyme;
