Buckwheat, Hazelnuts & Chocolate Biscuits

Ingredients

  • 180 g buckwheat flour
  • 70 g rice flour
  • 100 g honey (multi-flora)
  • 80 g cocoa powder
  • 50 g hazelnuts (roasted)
  • 80 ml extra virgin olive oil
  • 1 egg
  • 1/2 teaspoons baking soda

Preparation

  1. – sift the buckwheat and rice flour and mix them together with the cocoa powder and the bicarbonate of soda

  2. – in a separate bowl beat the egg with the honey – put the extra virgin olive oil in a blender with the hazelnuts and grind them

  3. – mix all the above ingredients together and knead well

  4. – roll down the pastry shaping a disk of around half centimetre thick

  5. – shape your biscuits with a cutter and place them on a baking tray. Bake at 180 degrees for around 10/12 minutes
