Ingredients

180 g buckwheat flour

70 g rice flour

100 g honey (multi-flora)

80 g cocoa powder

50 g hazelnuts (roasted)

80 ml extra virgin olive oil

1 egg

1/2 teaspoons baking soda
Preparation

– sift the buckwheat and rice flour and mix them together with the cocoa powder and the bicarbonate of soda

– in a separate bowl beat the egg with the honey – put the extra virgin olive oil in a blender with the hazelnuts and grind them

– mix all the above ingredients together and knead well

– roll down the pastry shaping a disk of around half centimetre thick

– shape your biscuits with a cutter and place them on a baking tray. Bake at 180 degrees for around 10/12 minutes
