Blueberry & Chocolate Muffins

These muffin are absolutely delicious! Moist, juicy and chocoholic.

Ingredients

  • 250 gfresh blueberries
  • 200 gdark chocolate chips
  • 200 ggreek yogurt
  • 180 gdark muscovado brown sugar
  • 170 gwhite spelt flour (or white flour type 0)
  • 100 mlsunflower oil (cold pressed)
  • 30 gunsweetened cocoa powder
  • 4egg
  • 2 teaspoonsbaking powder
  • 1/4 teaspoonvanilla extract

Preparation

  1. – put the eggs, the vanilla extract and the sugar into a bowl;

    – whisk them together till you get a frothy cream;

    – add the Greek yogurt and mix well;

    – sift the flour, the baking powder and cocoa powder onto it and mix well till they get completely absorbed;

    – add the chocolate chips and mix well;

    – add the oil and mix well till it gets absorbed completely;

    – fill each muffin mold for 1/3 with the cake mixture, then top them with some blueberries;

    – pour another 1/3 cake mixture and top with remaining blueberries;

    – bake at 170 degrees for about 40/50 minutes;
