Today I propose you these tasty crunchy biscuits with a rustic flavor. Buckwheat gives these biscuits a strong flavor that is well balanced by the dark chocolate. Oat flakes add extra flavor and crunchiness. These biscuits will win you over from the first bite!
Ideal for breakfast in milk or tea, or during a break accompanied by a nice cup of coffee.

Ingredients

200 g white flour type 0 (I used white spelt flour)

150 g dark muscovado brown sugar

130 g butter

100 g buckwheat flour

50 g rice flour

50 g dark chocolate chips

50 g oat flakes

2 eggs

1 orange zest (optional)

half teaspoons baking soda
Preparation

- – bring the butter to room temperature, then cut it in cubes;
- – sift the 3 different types of flour and the baking soda onto a large bowl;
- – add the oat flakes, the chocolate chips and the orange zest;
- – mix well all the ingredients with your hands;
- – add the sugar and mix well;
- – add the the butter and the eggs;
- – knead well till with you hands till you get a dough (try to work the ingredient as quick as you can can);
- – wrap the dough in some cling film and keep refrigerated for at least 4 hours;
- – work the pastry with a rolling pin to form a large disc with a half centimeter thickness;
- – use a 6 cm diameter cutter and shape the biscuits from the pastry;
- – bake at 165 degrees for around 20 minutes;
