Banana, Walnuts & Chocolate Chips Muffins

Ingredients

  • 400 g flour (type 0)
  • 250 g dark muscovado brown sugar
  • 170 g walnuts
  • 125 ml sunflower oil (cold pressed)
  • 70 g dark chocolate chips
  • 17 g baking powder
  • 4 eggs
  • 4 very ripe bananas
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground coffee
  • 1 pinch vanilla powder

Preparation

  1. Banana, Walnuts & Chocolate Chips Muffins
    • – whisk the eggs with the sugar and the pinch of vanilla powder until they get light and frothy;
    • – pour the oil gently and keep whisking;
    • – meanwhile, in a separate bowl sift the flour together with the baking powder;
    • – slowly pour the flour on the whisking eggs. Keep on mixing until the flour gets absorbed completely;
    • – do the same with the ground cinnamon and coffee;
    • – add the walnuts and the chocolate chips;
    • – finally, pour the smashed bananas and mix until they get absorbed;
    • – pour the mixture into muffins envelops that you placed in an apposite muffins baking tray;
    • – bake at 180 degree for about 25 minutes;
