Ingredients

400 g flour (type 0)

250 g dark muscovado brown sugar

170 g walnuts

125 ml sunflower oil (cold pressed)

70 g dark chocolate chips

17 g baking powder

4 eggs

4 very ripe bananas

1 teaspoon ground cinnamon

1 teaspoon ground coffee

1 pinch vanilla powder
Preparation

- – whisk the eggs with the sugar and the pinch of vanilla powder until they get light and frothy;
- – pour the oil gently and keep whisking;
- – meanwhile, in a separate bowl sift the flour together with the baking powder;
- – slowly pour the flour on the whisking eggs. Keep on mixing until the flour gets absorbed completely;
- – do the same with the ground cinnamon and coffee;
- – add the walnuts and the chocolate chips;
- – finally, pour the smashed bananas and mix until they get absorbed;
- – pour the mixture into muffins envelops that you placed in an apposite muffins baking tray;
- – bake at 180 degree for about 25 minutes;
