Baked “Pizzaiola” Grilled Aubergines

With fresh aubergine being in season now, this is a delicious and easy recipe to make during summer.

Ingredients

  • 250 gtomato pulp
  • 250 gfresh mozzarella cheese
  • 8 slicesaubergine (you need 1 big aubergine)
  • 4 slicesham, high quality (if you want a vegetarian recipe, then you can remove this ingredient)
  • 1 bouquetfresh basil
  • q.s.ground oregano
  • q.s.extra-virgin olive oil
  • q.s.breadcrumbs
  • q.s.table salt
  • q.s.ground black pepper

Preparation

  1. – season the tomato pulp with a pinch of salt, ground pepper and oregano;

    – cut the aubergine in thin slices;

    – grill the slices on both sides;

    – put the grilled slices onto a baking tray (on a baking paper sheet);

    – spread some tomato pulp onto the slices;

    – top with a basil leaf and a slice of mozzarella cheese (add here the slice of ham if you like it);

    – top it with another slice of grilled aubergine;

    – spread again some tomato on top;

    – put another slice of mozzarella;

    – spread some breadcrumbs all over;

    – bake at 180 degrees for around 10/12 minutes;

    – before serving, sprinkle some extra virgin olive oil on top
